Grouse, such as partridge, feed on wild berries, nuts, and seeds. Near the cranberry regions of southern Wisconsin, the wild berries turn the bird’s meat bright pink. In this recipe, the rendered duck fat, cranberries, and sage baste the meat while it roasts to become tender and flavorful. This is great on our Wild Rice Pilaf.
