Bison is the cleanest-tasting red meat, milder and a little sweeter than beef. Tartare showcases this clean taste. Here it’s seasoned with juniper and mint and gets a tangy kick from sumac.

Ingredients

  • 8 ounces boneless bison, trimmed of fat and silver skin, finely chopped
  • 1 tablespoon crushed juniper

Method

In a medium bowl, combine the chopped bison, juniper, mint, maple sugar, onion, sumac, and oil. Season with the salt. Form into patties and serve topped with a duck egg yolk and cracker of your choice.
