Wasna, or dried meats, are as delicious and versatile as they are ancient, and they are exceptionally easy to make. We use wasna in salads, on top of wild rice and hominy cakes as an appetizer, and in soups and stews, for they have an extraordinary flavor. Wasna is sometimes called pemmican—the mix of dried meat and berries. It’s rough, sweet, and immensely nutritious and satisfying—loaded with protein, low in sugar and carbs—the original good-foryou snack food.
