This is my take on a classic noodle dish from Shanghai. The oil used to cook the green onion becomes flavorful and aromatic. Combined with noodles, saté sauce, and a crispy topping, this dish is an incredibly delicious meal for any time of the day.

Ingredients

  • 1 serving instant noodles (without the seasoning packet)
  • 1 green onion
  • 2 tablespoons canola oil

Method

  1. Cook the noodles (without the seasoning packet) according to the package instructions or until al dente. Drain and rinse with cold water.
  2. Trim the ends of the green onion, and cut it crosswise into a green part and a white part. Julienne each part lengthwise into thin strips.
