Have you made the teriyaki sauce from the first chapter? Great! You can use it in this simple and quick recipe. I chose ground beef for this, but any protein will work. The noodles are tossed in a reduced teriyaki sauce for a perfect balance of sweetness, saltiness, and creaminess. Kewpie mayonnaise is also a delicious addition.

Ingredients

  • 4 ounces (180 g) kuan miao noodles
  • 1 head bok choy, sliced lengthwi

Method

  1. Fill a medium pot with water and bring to a boil. Add the bok choy and cook for 1 minute. Remove with a slotted spoon and set aside.
  2. In the same pot, cook the noodles as instructed on the package or until al dente. Drain and rinse with cold water.
