Dan dan noodles are an incredibly popular Sichuan street food dish: springy noodles served in a spicy sauce with rich flavors, crispy minced meat, coarsely chopped nuts, and bok choy. Different restaurants in China have their unique versions of the dish, and this is how I make mine.

Ingredients

  • 1 head bok choy
  • 4 ounces (125 g) servings wheat noodles

Method

  1. Bring a pot of water to a boil. Separate the bok choy into leaves and add them to the pot; boil for 1 minute. Drain and set aside.
  2. Cook the noodles as per package instructions or until al dente. Before draining, reserve about ½ cup (120 ml) of the noodle water. Drain the noodles and rinse them in cold water.
