When it comes to toppings for steaming ramen, chashu (Japanese pork belly) is one of my favorites. Whenever I have ramen at a restaurant, I usually order extra. A perfect piece of chashu, in my opinion, should have an even mix of fat and meat, and be cooked slowly.
