Meaning “flavored bamboo,” menma is a classic ramen topping but can also be enjoyed just as a snack. With a little care and attention, ordinary bamboo shoots transform into a delectable treat.

Ingredients

  • 1 (8-ounce/250-g) can preserved bamboo shoots, whole or sliced

Method

  1. Drain the bamboo shoots and rinse them thoroughly with water. If you bought whole shoots, cut them into slices about ⅛ inch (⅓ cm) thick and 1½-2 inches (3¾-5 cm) long.
  2. In a small saucepan or electric kettle, bring a few cups of water to a boil. Place the bamboo shoots in a strainer, and pour the boiling water over them (to wash away any lingering canned scent)
