“Shio” translates to “salt” in Japanese. Shio tare is one of the primary flavoring agents in ramen. A good shio tare in the right quantity accentuates the various tastes in the dish it’s used in, just as salt does.

Ingredients

  • 3 sheets kombu
  • 6 dried shiitake mushrooms
  • tablespoons

Method

  1. Cut the kombu into large pieces using scissors and place it in a pot. Add the mushrooms and about 2½ cups (600 ml) water. Let it sit for at least 3 hours.
  2. Incorporate the salt into the mixture and bring everything to a boil, stirring until the salt has dissolved. Let it cool, strain, and store in a clean glass jar in the refrigerator.
