This tart was inspired by the frog-he-would-a-wooing-go combination of gammon and spinach. I couldn’t resist. I decided to pair the rosy pink smoked gammon and dark, leafy green spinach, with two of the most British of ingredients: unpasteurised, aged Somerset Cheddar from Jamie Montgomery and seeded mustard for a little piquancy.
It worked to perfection first time round, so here it is.
