An un-temperamental dish that you can make with sausage meat or skinned sausages, to which you can add black pudding if you feel like it in a 50:50 mix, the black centre stage of the tart, the sausage meat edging it.
Fried apples or prunes are equally good, and I like sautéed red onion, celery and sage leaves with the apple.
