An apple tart is a lovely dish when you feel like a single decker rather than a pie.

Ingredients

8 crisp, good flavoured eating apples like Granny Smiths or Cox’s the juice of a lemon
60–90 g

Method

Preheat oven to 180°C/Gas 4. Make the pâté sucrée or sablée pastry and line the tart tin.

Prick with a fork and brush the tart with egg at this stage as it isn’t going to be baked blind.

Peel, core an
