As one of the top-level pledgers to Smart Tart, Kay Ord asked for her tart to reflect her kitchen garden. She also asked for Gruyère, which works particularly well with leeks, giving that yielding goo as you delve through the crust to the centre.

I use some of the more tender green tops of the leeks which many waste; I think they add colour and flavour. I thought an ash log of Golden Cross unpasteurised goat’s cheese which has always been a favourit
