Here’s a shout-out to our New Mexico PEEPS! This was a burger that was heavily requested of us. When we finally got around to doing our version (a Whataburger copycat), we understood why there were so many people calling for us to do this one. It was so we could know what they already knew—it’s incredible!

Ingredients

  • 4 slices thick cut bacon
  • 1 tablespoon (15 ml) vegetable oil

Method

Cook the bacon

  1. Turn the griddle on to medium heat (350°F [180°C]).
  2. While the griddle is warming, place the strips of bacon on the griddle. (We have found that placing the bacon on the griddle before it is hot helps keep the bacon from curling too much.)
  3. Cook the first side until browned and flip.
