Few main dishes dazzle guests like beef tenderloin. This is an easy but elegant version, flavored simply with garlic, salt, and pepper and then polished to perfection with a quick sear and a slow smoke.

Roasted Garlic Mash

  • 1 whole head of garlic
  • 1 tablespoon kosher salt or coarse sea salt
