For decades, Southerners had pimiento cheese pretty much to themselves. We couldn’t be happier now that it’s as common in Albuquerque as in Atlanta. You can use any store-bought version or whip up the one included here. A simple rub is all you need on the meat, with so much flavor happening from the inside out.

Ingredients

Pimiento Cheese

  • ¾ pound medium or sharp cheddar cheese, grated
  • ½ cup mayonnaise<

Method

  1. Make the pimiento cheese at least 30 minutes and up to several days ahead of when you plan to cook and serve the burgers. In a food processor, pulse together the cheese, mayonnaise, red peppers, and onion until almost smooth. Taste and add salt if you wish. Cover and refrigerate while you fire up the smoker.
