Method

  1. At least 2 hours and up to 3 hours before you plan to barbecue, combine the dry rub ingredients in a small bowl. Massage the meat lightly with the oil and mustard and sprinkle evenly with the dry rub. Place the meat in a shallow glass ovenproof or other smoke-proof dish, cover it, and refrigerate it.
  2. Prepare the smoker for barbecuing, bringing the temperature t
