Many dishes from the old South have their origins in Africa, and that’s the source of the seasoning combination here, a thunderstorm of a mixture.

Thunder Paste

  • cup freshly squeezed orange juice

Method

  1. The night before you plan to barbecue, combine all the paste ingredients in a food processor or blender. Coat the thighs thickly with the paste, rubbing under and over the skin. Place the chicken in a plastic bag and refrigerate it overnight.
  2. Prepare the smoker for barbecuing, bringing the temperature to 200°F to 220°F.
