This is a fancy “sandwich” of double-smoked salmon stuffed between two barbecued flounder fillets. Use leftovers from Kingly Salmon or substitute a store-bought Pacific Northwest-style hot-smoked salmon.

  • 1½ to 1¾ pounds flounder or sole fillets

Method

  1. Prepare the smoker for barbecuing, bringing the temperature to 180°F to 200°F.
  2. Cut the fillets into 8 equal portions. Mix the rub ingredients in a small bowl and rub the flounder portions evenly with the mixture. Let sit at room temperature for 15 to 20 minutes.
