Olive Paste

  • ¼ cup chopped pitted black olives, preferably kalamata or niçoise
  • 2 garlic cloves, halved

Method

  1. Prepare the smoker for barbecuing, bringing the temperature to 180°F to 200°F.
  2. In a food processor, process the paste ingredients to a thick puree. Rub the paste over the tuna steaks. Transfer the tuna to a plate and allow the steaks to sit at room temperature for about 20 minutes.
