Ingredients

Sherry Marinade and Sauce

  • Juice of 2 oranges (about cup)
  • Zest of 1

Method

  1. Prepare the smoker for barbecuing, bringing the temperature to 180°F to 200°F.
  2. Combine the marinade ingredients in a large glass measuring cup. Lay the fillets in a single layer in a shallow, nonreactive dish or place them in a plastic bag. Pour the marinade over the fillets and let them sit at room temperature for about 30 minutes.
  3. Drain the fillets,
