Honey enhances the already sweet flavor of a juicy Maine lobster tail. In this dish, the smoke is deliciously subtle and light.

Ingredients

A Honey of a Marinade and Optional Mop

  • 2 cups seafood stock
  • 1 cup dry white wine
  • ½

Method

  1. An hour or two before you plan to barbecue, mix the marinade ingredients in a saucepan and bring to a boil over high heat. Stir, if needed, to dissolve the honey and salt. Remove the pan from the heat and let the mixture cool to room temperature.
  2. Immerse the lobster tails in the cooled marinade and refrigerate them for 1 hour.
