These are basic yet scrumptious, a perfect stovetop-smoker side dish for a winter evening. For a more festive appearance, sprinkle the onion rings with chopped chives, parsley, or other compatible herbs after cooking, or drizzle with your favorite barbecue sauce.

  • 2 large onions, sliced into ⅓-inch-thick rings

Method

  1. If you want to keep the onions in neat concentric rings, run a soaked bamboo skewer through each slice. Arrange the onions in a shallow dish. Whisk together the oil and vinegar and splash over the onions. Turn the slices as needed to coat both sides lightly. Sprinkle with salt and pepper.
