OK, we know it sounds weird. However, versions of this dish have become almost as popular as jalapeño poppers at BBQ competitions. They won’t replace pork and brisket at the center of the plate, but wedges of the cabbage may be nestled nearby.

Ingredients

  • 1 medium to large cabbage head, about pounds
  • 4 slices bacon, chopped

Method

  1. Pull off any loose outer leaves from the cabbage. Par-cook the whole cabbage in a large pan of salted water over medium heat for about 15 minutes to soften it. Drain the cabbage and turn it core side up. Make a little foil collar for the cabbage to sit on, tearing off about a footlong piece of heavy-duty foil, then crumpling it into a ring that will hold the cabbage upri
