Horseradish Paste

  • 2 teaspoons freshly squeezed lemon juice
  • ½ teaspoon prepared horseradish

Method

  1. Prepare the smoker for barbecuing, bringing the temperature to 200 F to 220 F.
  2. In a small bowl, combine the paste ingredients. Rub the trout inside and out with the paste and let the fish sit at room temperature for 20 to 30 minutes.
  3. Transfer the trout to the smoker. Cook the fish until it’s opaque and flakes easily, 35 to 45 minutes. Allow the trout
