Ingredients

Fruity Marinade and Mop

  • ¼ cup raspberry vinegar or other fruit vinegar
  • ¼ cup chicken stock

Method

  1. At least 1 hour and up to 2½ hours before you plan to barbecue, combine the marinade ingredients in a large glass measuring cup. Place the chicken livers in a shallow, nonreactive bowl. Pour the marinade over the livers and marinate for up to 2 hours in the refrigerator.
  2. Prepare the smoker for barbecuing, bringing the temperature to 200°F to 220°F.
