This notion came from our barbecue buddy Wayne Whitworth, who has fired up many a pit around dawn. These dandy breakfast sandwiches will get anyone through to lunch.

Method

  1. Prepare the smoker for barbecuing, bringing the temperature to 200°F to 220°F.
  2. Let the Canadian bacon sit, covered, at room temperature for 15 to 20 minutes.
  3. Place the Canadian bacon slices in the smoker and cook until warmed through and fragrant from the smoke, about 15 minutes. Transfer the Canadian bacon to a greased 6-cup muffin pan, tucking each
