Anyone can fry potatoes, but few people know how to make great French fries. The secret is a few extra steps, all worth the time in extra flavor. Increase the number of potatoes and other ingredients as needed for additional eaters.

  • 1 to 1½ medium baking potatoes

  • Peanut oil or lard for deep-frying

  1. Wash the potatoes and, if you wish, peel them. (We prefer the peels on, and besides, it’s less work.) Slice them into fat matchsticks, about ⅛ inch wide, and toss them into a bowl of cold water. Soak the potatoes in the water for at least 1 hour and preferably 2, to eliminate much of the starch. Pour off the water, add more cold water to cover, and toss in a half dozen i
