Some of the best cod fillets available in Britain are the frozen ones from the major supermarkets. The reason for this is simple: the fish are gutted, filleted and frozen immediately they are caught. So-called fresh cod may have been sitting around on ice for up to two weeks before it reaches your fishmonger. The only cod that can better it, is one that you know has been out of the water for no more than 12 hours.
