Line the pan with thin slices of smoked streaky bacon, leaving flaps hanging over the sides. Fill with the potato mix of your choice and fold the bacon flaps over, stretching them to cover the cake. Cover any gaps with more bacon and press the assemblage lightly. Bake as for the above. You may find that the bacon on top will get rather crispy in the later stages of baking; cover loosely with foil to protect it.
