As I’ve mentioned elsewhere, we Scandis like to treat our seafood with as little fuss and embellishment as possible – this is one such example. A good piece of roasted salmon can then be spun into any number of dishes.

Ingredients

  • 500 g fillet of salmon, skin on
  • butter
  • 1 lemon, halved
  • sea salt

Method

Preheat the oven to 180°C/gas mark 4 and line a roasting dish with baking parchment.
