A buttery, crisp quesadilla wrap with smoky chorizo, spicy jalapeño pepper and lots of oozing cheese. What’s not to love?


  • ½ tsp butter
  • 1 flour tortilla or flatbread wrap
  • 1 small handful


Rub a skillet or frying pan with the butter in an even layer and place it over a medium heat.

Pop the tortilla wrap in the pan and scatter an even layer of grated cheese all over the surface. Cook for a few minutes, until the cheese starts to melt and ooze, then top half the surface with the chorizo slices, peppers, coriander and spring onion. Season with salt and pepper and use a spatu
