Ingredients

  • 1 tablespoon olive oil
  • 2 medium onions, diced
  • 3 cloves

Method

Heat olive oil in a pot over medium fire. Add onions and saute until transparent, but not brown. Add water and remaining vegetables and bring to the boil.

Reduce heat and simmer gently for 30 minutes.

Makes approximately 4 cups.
