Plums and almonds are a match made in heaven. Don’t be tempted to skip the gentle roasting of the plums, it will only result in the frangipane becoming less appetizing by doing so. The plums benefit from losing some of their juice prior to being baked, however, if you rescue the juices from the rotating tin (pari) and add them back to the tart after baking, none of that delicious plummy flavour will be lost.
