My Mother’s Carrot Cake

I love carrot cake; it is my absolute favourite – hands down. My Mum used to make this cake for me and I would know the moment I walked through the door if she had – the welcoming smell of warming spices filling the air. I’ve never found a better carrot cake than this one, and I’ve tried many, unable to resist a slice whenever or wherever I see some.
