Celebration Cake

Ingredients: 100 g (3½ oz/1 cup) ground almonds (almond meal); ½ tsp baking powder; 450 g (1 lb/3½ cups) self-raising (self-rising) flour; 9 eggs; 375 g (13¼ oz/scant 2 cups) caster (superfine) sugar; 375 g (13¼ oz)/1¾ cups/3½ sticks) unsalted butter, softened; 200 g (7 oz) smooth strawberry jam/jelly (or other flavour of choice); 250 g (9 oz/2 cups) fondant icing (powdered) sugar; cornflour (cornstarch), for dusting; a selection of colourful sprinkles; ½ packet natural-coloured marzipan; 3 tbsp milk; food colouring gels (optional); ribbons and candles

There will always be special days that call for a celebration cake, and if it is a homemade cake that has been decorated with care, everyone appreciates it that much more. This cake will adapt easily to any occasion, simply change the colours to suit and use appropriate sprinkles, candles and ribbons.
