Think of this as Italian comfort food. The recipe interests me because of a certain prissiness in it. I developed it years ago and put it in Food for Friends. I obviously thought whole floating cloves of garlic were unacceptable and tied them up in a cloth so that they could be removed. Today I would probably add two more cloves and let them all float, prizes for the eaters. Certainly, the cook should suit the occasion and the friends.
