I developed this one cold day when the vegetables around town were limited. I think the result, with the slightly bitter Belgian endive (witloof), the somewhat sweet fennel, and the aromatic celery root all making a contribution, is unusual and good. For those who don’t feel fully fed with soup and bread, I serve boiled very small, firm potatoes.
