The cold world of Russia in winter didn’t provide much in the way of fresh vegetables. Pickles of one sort or another played a large part in providing vitamins for the winter months. Sauerkraut was a widely used ingredient, as in this sauerkraut and beef soup and in the Hungarian Szekely goulash.
This meat-rich soup is an entire meal. The sauerkraut is supposed to be fresh-tasting and crunchy, not overly salty. Sometimes such sauerkraut can be found in Hungarian, German, or Polish m
