Menudo is a typical New Year’s Day dish in Mexico. It is a great hang-over remedy.

I love Rick Bayless and his food. With his blessing, I have adapted this recipe for red menudo from one of his. I hope he likes it.

Dark flat dried New Mexico chilies are used for this menudo. The chilies are maroon in color, rather large, shiny, and mild in flavor.
