Peanuts, or groundnuts, are not nuts. They are legumes that grow in pods like peas. They grow under the ground and have to be dug like potatoes. Made into peanut butter, they are an easily stored protein-rich soup base. It is possible to make one’s own peanut butter from unsalted peanuts. Grind them in a food processor or blender, adding a little peanut oil (see the recipe).
