Fruit vinegars add a sweet note to salad dressings, and the addition of the chilli means this one packs a real punch. Start with a mild chilli the first time, as the flavour carries and lingers on the palate.

Ingredients

  • 300 ml white wine vinegar
  • 200 grams frozen raspberries
  • 1

Method

Preheat a water bath to 60°C/140°F.

Place all ingredients in a vacuum pouch and seal on a medium setting. Cook in the preheated water bath for 1 hour</
