Cotechino is a classic Italian dish that involves poaching pork for hours in gently simmering water. The following recipe is my take on this dish, and it relies heavily on the correct ratio of wine and spices to pork meat, skin and hard fat to give it the perfect balance. Serve it with a simple salad of bitter greens and relish, as I have here, or as an entrée with braised lentils.
