Ingredients: 20 grams sherry vinegar; 500 ml cream; 100 grams small tapioca pearls; 2 leeks, white parts only, sliced into thin julienne; 125 ml extra virgin olive oil; 1 sprig rosemary; 170 grams ham, cut into small dice; sea salt flakes; 100 grams ham chunk; 25 grams butter; 2 grams agar agar; 250 ml water; 1 ripe pineapple; 20 grams sugar; 3 garlic cloves, skins left on and cloves crushed; 5 grams gelatine sheets, gold strength, soaked in cold water and squeezed dry; salt, to taste; 2 grams salt; fennel pollen; 10 Thai red chillies or chile de árbol; 50 grams honey; vegetable oil, for frying; splash of lemon juice; 20 grams mild curry powder; 125 ml vegetable oil
