My affection for this sweet and spicy dish comes from serving it as a side to my favourite dish of pork belly and crackling. The shallots become meltingly soft; the raisins are plump, filled with the sweetness of butter and honey; and the chilli gives the dish a real bite that cuts through the decadent fattiness of pork belly.

Ingredients

  • 400 grams shallots or pickling onions
  • 20 grams golden raisins
  • 1

Method

Preheat a water bath to 83°C/182°F.

Peel the shallots or pickling onions, and wash under running cold water. Place into a vacuum pouch along with the remaining ingredients, and seal on high, removing as much air as possible.
