I am a huge fan of butter, but I’m also a really big fan of my pants fitting. Therefore, I often cook lighter meals during the week, saving my richer recipes for the weekend. These potatoes are a weekday recipe that I often serve with plain Greek yogurt and green onions for a mock twice-baked potato. Or, served with ketchup, the kids think they are french fries!
