I am a huge fan of Cajun food, and this recipe is one I’ve always been fond of. It was traditionally made with leftover meat—frugality being a shared trait of Southern and Cajun food. In my opinion, however, you can’t make dirty rice without livers. So if you’re wondering what to substitute for them, the answer is nothing. Give this one a try; it may surprise you!
