There are many stories about where Hoppin’ John got its name, but one thing is unanimous around the Southern table: it’s not Hoppin’ John unless there’s pork, peas, and rice. It’s traditionally a one-pot meal, but I prefer to cook the peas separately to be sure they’re not overdone, and I use lima beans instead of traditional black-eyed peas. You may have to wash another pot, but it’s worth the extra step.
