Combine the cilantro, mayonnaise, queso, aji amarillo paste, jalapeños, garlic, lime juice, and salt in a food processor. Process on low speed until combined and chopped, then while processing, drizzle in the olive oil and ¼ cup [60 ml] of water, alternating additions, until combined. Taste and adjust the salt.
