  • cups [225 g] sliced portabella mushrooms
  • 1 tsp olive oil

Method

In a medium sauté pan over medium heat, sauté the mushrooms with the olive oil for 2 minutes. Add the spinach and sauté until it wilts slightly. Transfer the spinach and mushrooms to the prepared pie shell and sprinkle with the bacon, Parmesan cheese, and chives. Follow the remaining directions for Baptism Quiche.
